Red, White, and Blue Dessert Recipes for a Lifted Summer

By Joan Eberhardt

The official start of summer is here and that means, if nothing else, Memorial Day barbeques. Many states with legal marijuana markets may have commercially prepared cannabutter available for sale in a dispensary, but making your own cannabutter is pretty easy. There are tons of DIY recipes online, this is a pretty good one from our friends over at Leafly. If you’re looking to make cooking with cannabutter into a hobby, tools like the Mota Pot are designed to do the hard work for you.

So here are some great, red, white and blue recipes you can easily adapt for your next lifted Memorial Day, Fourth of July or any barbeque at all.

Fizzy Blueberry Meyer Lemonade

Cannabis can also be infused into simple syrups, which makes a great addition to fizzy summer drinks.  This recipe can pretty easily be scaled up to the number of people you will be serving, but it’s fresh Meyer lemon juice, blueberries and cannabis-infused simple syrup would make for a refreshing treat on a sunny afternoon. If you can make your simple syrup using a berry-flavored strain, like Blueberry, you should find notes of sweet berries and blueberries that lead to a happy, relaxed buzz.

Classic Strawberry-Rhubarb Pie

The 3 tablespoons of butter this tasty, summer crisp calls for is just enough to enhance your afternoon without overwhelming it. With homemade edibles, dosing can be a little tricky, the best thing to do is to start with a small amount, wait, and see how you feel after an hour before taking any more. Rhubarb and strawberries are often best in the early spring, so try this one sooner rather than later. Paired with a sweet, berry scented strain like Strawberry Kush should add hint of sweetness and a relaxed, euphoric high.

White Chocolate Macadamia Nut Cookies

These white chocolate macadamia nut cookies are a snap to put together and bake up into crisp, chewy little mounds of sweetness. The 12 tablespoons of butter in this can pack a bomb, so careful dosing is encouraged. Bake the full two dozen for bite-sized little nuggets of nutty goodness. Pair them with a Chocolate Chunk for a pungent, earthy sweetness that leads to a relaxed and happy buzz.
